Banana Pancakes with a Punch

It's time for this week's Banana Recipe. It's an easy one...

Banana Pancakes with a Punch!
Take your favorite pancake mix (I like Bob's Red Mill 10 Grain) and add to the mix (approximate amounts to 1 c. mix):

1 sm-med mashed banana
1/2 scoop soy protein powder

Then just follow the directions on the package. You may need to add a little extra water to offset the protein. Then just make 'em on your griddle like you would regular pancakes. Adds a little extra protein to your pancake! These freeze nicely so I make several servings worth and put them in freezer containers. Just microwave when you are ready to chow down on a great breakfast or any meal for that matter - especially that post-workout meal! They taste great with honey, and I'm sure some peanut butter and chocolate chips would be fantastic for an extra treat.
